When I was growing up, my mom would steam it and serve it with mayonaise. I know it sounds weird, but it was really good. Now a days, I put it on a baking sheet, drizzle some olive oil over it and sprinkle some salt and bake it at about 400 degrees until it's a little crunchy. Oh so very yummy!
I roast mine like megan does--I'll also chop it up (after it's roasted) and throw it in with some penne pasta tossed with a creamy pesto (1/2 a container of Buitoni's alfredo with a heaping spoonful of same brand of pesto) and some grilled chicken strips. Yum.
Lay 15-ish spears out flat on some foil. Pour 2-4 (or until your heart desires)Tbs lemon juice on top. Salt and Pepper to taste. Cover with a second piece of foil and roll all 4 edges together.
Grill for 5 min and then flip and grill for 5 more.
Never tried it, but I'm sure that you can use other means than grilling with this recipe.
I love this because it's so simple, light, healthy and has so much flavor.
I love to buy the Ziploc Zip n Steam Bags and follow their recipe for Sesame Asparagus. I always have a hard time getting asparagus crisp. These bags do all the work for you. You just cut it up, throw all the stuff in and microwave it. If the recipe is not in the bag, I'll post it sometime. I also have a delicious appetizer with asparagus & cream cheese. (I'm Linda's friend by the way. She introduced me to this fun blog!) Nancy
megan's directions turned out totally yummy asparagus. we tossed our one pound of asparagus with 1 T. of oil, sprinkled with salt and pepper, and baked on foil at 350 for 10-15 minutes. even chuck liked it! who knew we liked asparagus?!
My favorite way to do asparagus is to lay it out on a cookie sheet coated in cooking spray and cook for 12 minutes at 400. Drizzle this mixture on top once it is baked: 2 T melted butter (microwave works fine) 1 T soy sauce 1 tsp balsamic vinegar
I also season with salt and pepper. It's delicious, even my husband likes it.
