Lemon Drop Cookies

1 1/2 cups shortening
2 cups sugar
3 eggs
1 tsp. lemon extract
1 tsp. lemon zest
2 tsp. vanilla
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
4 cups flour
1 pkg. lemon drops, crushed (1 oz box of lemon heads)

Glaze:
1 cup powdered sugar
Juice of 1 lemon (about 3 tbs, or use Minute Maid frozen lemon juice)

Preheat oven to 350 degrees

1. Mix first 6 ingredients. Then add next 4 ingredients.
2. Stir in the lemon heads.
3. Roll into balls and place on lightly greased cookie sheet. Bake for 10-12 minutes.
4. Let cookies cool 1-2 minutes on cookie sheet then brush with glaze.

Makes 6 dozen.

i must have a huge problem: i can't make cookies the size they're supposed to be. oh well. i got just over 100 of these. but they were awesome. so i had to nearly double the amount of glaze that becky wrote.

one note: they are better the second (and third, if they last) day after baking. the first day, mine were slightly crumbly and hard, but they totally softened up the next days. YUM.
