Carrot Cake



Cake:

2 c. flour
2 t. cinnamon
½ t. salt
2 t. soda
1 c. coconut
1 c. raisins
1 c. chopped pecans
2 c. sugar
3 eggs
¾ c. oil
¾ c. buttermilk
2 t. vanilla
2 c. grated carrots (from about 4 carrots)
1 c. crushed pineapple, well drained (8 oz. can works fine)

Icing:
8 oz. cream cheese, at room temperature (can use low-fat)
½ c. butter, at room temperature
1 t. vanilla
2 ½ - 3 ½ c. powdered sugar
Cream the cream cheese and butter. Add sugar, vanilla, and enough milk to make right consistency.

Cake -
Beat eggs. Add sugar and oil. Add liquid and dry ingredients alternately. Add fruits last. Batter will be pretty wet. Bake at 350º in a greased 9x13 pan for 45 minutes. Frost.

okay, i always do 1/2 oil and 1/2 applesauce. i didn't do raisins b/c ben didn't want them. i also didn't do nuts b/c i didn't have them.

for the icing i read somewhere that you can make it with omiting the butter. so i just didn't add any butter. i whipped the cream cheese and then slowly added powdered sugar and milk until i got the consistency i wanted. it was fantastic without the butter, trust me. my favorite part of the cake is the icing and so i was a little scared of changing it, but it was great.

oh yeah, i didn't have buttermilk but found out you can add a tablespoon of either vinegar or lemon juice to one cup milk for the same effect. i did lemon juice.

how did you make the cute little carrots? and didn't you just have a baby? where are you finding the time for this? i am impressed.

this is a great carrot cake, although i have yet to try linda's. i'll have to do that and make the comparison. i like this one, though because it's really really moist and filled with good fruits.

i used food color to color a little bit of frosting. then just put the colored frosting in a baggie and snipped a tiny hole and made the shapes!

and, yes, i did just have a baby linda. which explains maybe why i was so spacey and forgot that you recently posted a recipe for carrot cake that looks amazing! i'll have to try out yours.

how do i have the time? i can only answer that by saying i have a really good husband who also happens to be a really good father.

did this again tonight. learned that it easily halves and bakes in one 8x8 for about 40 minutes, but check to make sure it doesn't burn before that.
