1 lb. ground beef or turkey
1 medium onion, chopped
15 oz. can whole kernel corn, undrained
10 oz. can diced tomatoes/diced tomatoes with chilies if you like a little kick - we do.
15 oz. can pinto beans in chili sauce, undrained
1 1/4 oz. envelope taco seasoning
10 oz. can tomato soup, undiluted
10 oz. can tomato soup, undiluted
1 cup water
tortilla chips (I use the Tostida scoops)
grated Monterey Jack cheese
Brown beef/turkey, drain and rinse with hot water to remove excess fat. Add onion and cook until onion is clear. Combine all remaining ingredients except tortilla chips and cheese. Simmer on low. Serve in bowls and top with cheese. Eat with chips.
Makes 4-6 servings.

O.k., so I swear I've seen the Tostida scoops that are baked and not fried, but everytime I go to buy them, they aren't to be found. So if you find some tell me where, so I can go looking. Thanks!

i saw a commercial for the baked tostidos scoops the other day, so no, you're not crazy. they may not be available in all places, but they're at least being produced.
we did this last night and it was great. we used 1.3 lbs of ground turkey, since that's how big the package was. couldn't find a 10 ounce can of tomatoes, so used a 14 ouncer. everything else as posted. thanks megan! (plus, any excuse to have chips in the house is a bonus.)
i can't believe i've never posted anything. we've made this quite a few times and just love it. very tasty - and, right, erin any excuse for chips is good! my kids love it, too.
we always do the 93/7 percent fat ground turkey and it turns out great. thanks for the great recipe megs.
