Lemon Chicken

12 chicken tenders
2 T. lemon juice
1 cup heavy whipping cream(not half & half)
2 T. white cooking wine or white grape juice concentrate
2 tsp. grated lemon peel
parmesan cheese
salt and pepper

1. Cook chicken tenders in a buttered saucepan, until browned and cooked through.

2. Place chicken in a glass casserole dish.

3. In the same saucepan, add lemon juice, lemon peel, and white cooking wine OR white grape juice concentrate. Keep on low heat and add the heavy whipping cream. Add the salt and pepper in the sauce.

4. When heated through, pour over chicken tenders. Add a generous amount of parmesan cheese on top.

5. Place in the oven on broil for 7-12 minutes.

Serve over mashed potatoes or rice.

I think I've made this before, but seeing it this morning, I decided to make it tonight. I made it a little crispier on top and added broccoli to the dish. It was yummy.

broccoli would have been good. dang.

anyway, we did this last night and it turned out great. our package of tenders was 1 pound and had only six. but i still left the sauce amounts alone.

i loved the cheese; it just added a little something to it.

and for anyone who has never used the broiler before: no need to preheat oven. just turn it on a minute before needed. and my mom said to keep the oven ajar while broiling, so i did.
